Employees and consultants are commonly issued stock options as part of their compensation for their role with a company. Under Canadian IFRS accounting standards, a company is required to value the options issued and report them as an expense. The resulting expense is known as stock based compensation, or share-based payments expense.  

The value of stock options are commonly calculated using the Black-Scholes model.  Black-Scholes considers the details of the options being issued and the Company's stock data in determining a value for stock options.  The exercise price and term of the options granted along with the volatility of the stock and the current stock price are the inputs that have the greatest effect on the value determined by the Black-Scholes model.  

Needless to say, stock-based compensation is complex area of accounting. Consult a professional accountant before attempting to account for stock options on your own.
