Stamford, Connecticut-based Centerplate, the caterer for Super Bowl XLII at the University of Phoenix Stadium, created a portfolio of culinary options that reflected the unique flavors of the Southwest, provided a number of natural and organic dishes, and delivered numerous innovative and freshly- prepared items developed especially for the big game.
The company's 2,000 on-the-ground employees served well over 300,000 meals during Super Bowl week. Even the traditional favorites received the special touch of a chef: the hand-tossed, brick oven-baked pizza; organic, hormone- free sausages; and chipotle honey chicken wings were just a few examples of the delicious fare. But perhaps more interesting were the servings that featured the flavors of the Southwest created especially for the game: the dark chocolate and fresh berry taco, the cabernet ancho chili braised short ribs, and the fresh pomegranate juice margaritas.

Suite holders (called loft holders at the University of Phoenix Stadium) were treated to four courses of regional specialties featuring fresh ingredients from local farms, according to Brett Lewis, corporate chef for Centerplate. Guests enjoyed dishes like a Tomato Caprese Salad featuring fresh heirloom tomatoes from Sunizona Farms and Chorizo Chili using a local microbrew, Cave Creek Chili Beer.
