The popularity of martinis dates back to the days of Prohibition when it was relatively easy to make illegal gin in a bathtub. Martinis were often mixed to mask the flavor of this "bathtub gin." With the repeal of Prohibition, the drink became an even more popular cocktail with more readily available and better-quality gin options. The tide started to change in the 1970s when vodka began to flow freely into the U.S. A more neutral spirit, it became omnipresent in mixed drinks like Appletinis, Cosmos and other "stylish" cocktails.
According to Eddie Kennelly, spirits consultant and Operations Director of Murphy's Bar and Respite Cocktail Bar in New York City, the time is right for this move.
