With more than 17 million Europeans suffering from allergies[1], food allergy is one of the most common allergic diseases. As the prevalence is greater among children than adults[2] , food allergy is a major paediatric health problem in western countries. Hospital admissions for severe allergic reaction[3] in children have increased 7-fold in the past 10 years in Europe[4].
